can I leave the battery hooked to the vehicle and let the alternator charge it while welding?

No. it is possible for welders to back-feed voltage into the system and can damage computer modules on the vehicle. Two fully charged healthy batteries on average will get you about 3ft of weld and still be able to restart both vehicles.

The welder has a Voltage gauge to help keep and eye on the battery status while welding. Two fully charged batteries should be about 26v, if you need more welding time, you will want to stop welding when you get close to 24v. Disconnect the welder, reconnect to vehicles and recharge the batteries with the alternator.
